I mentioned in a recent post that dh has lost over 20 pounds in the past seven weeks! One of the the many things we've learned is how important it is to start each day with a serving of what they call "dense protein" to kickstart your metabolism. Dh typically eats an egg and three egg whites mixed with different veggies each day. Unfortunately, I despise eggs and the only way I will eat them is in an omelet filled with veggies (carmelized onions, roasted red bell peppers and sauteed mushrooms) and covered in salsa. That way I can't taste the eggs. ;)
Cottage cheese is another dense protein but one that dh wouldn't touch. I went to one of my favorite sites, allrecipes.com, and seached "eggs and cottage cheese" to try and find something we could both eat that would still fit on the plan. The result is this yummy dish we've added to our breakfast rotation. They remind me of crepes yet you would never know they are made from primarily eggs and cottage cheese and just a drop of flour and milk. Best of all, I top mine with the homemade jam I mentioned in my last post! :)

Hi, it's a very great blog.
I could tell how much efforts you've taken on it.
Keep doing!
Oooo, I'm going to have to try these recipes! I need some strawberries though. : )

This is ironic, because my family makes fun of me on how much I detest eggs. Because I am trying to loose weight again, I was looking for something yesterday that had a lot of protein, I needed something to get me thru my workout. I scambled an egg with one extra white, with a tablespoon of low fat shredded cheese, then added little sliced grape tomatoes, green peas, and one piece of crumbled bacon. I actually ate it and liked it! Yeah!
Your other recipe looks great. I'll have to try it. Thanks for sharing!
Yum!! Thanks for sharing that recipe. I am going to try it as soon as I can get to the store to buy cottage cheese!
Jennifer- Would you mind sharing where in the Houston area you were able to find strawberries to pick??
My boys would love that! And I'd like to make some jam.
Glenda,
We went to Froberg's Fruit and Vegetable Farm in Alvin. This year it's only strawberries but next year they plan to have a crop of blackberries as well! Yea!!!
Let me know if you guys make it out there. I don't know how much longer the crop will be there; they originally said until the end of April depending on how much/how little rain we got.

that looks very good, thank you for posting the recipe! I am a boring eater, I am trying to eat more healthy so I have been having ezekiel bread toast everymorning w/pb on it. I should probably branch out a bit...
Yum! The pancakes were delicious. Thanks so much for sharing this recipe. We eat a lot of eggs for breakfast and it is nice to have something to mix things up a bit!

thank you Jennifer.
We have an orchard closer to our home, but they wanted $3.35/lb for U-picks and that was more than I wanted to spend.
I'll check out Froberg's.
These are otherwise known as "Norwegian Pancakes". My neighbor gave me this recipe (a little bit different) and made me some - it is handed down from her husband's Norwegian grandmother. My boys LOVE them! Thanks for reminding me I need to make some more soon, Jen!
